Spicy Cajun Fried Rice is a flavorful and satisfying dish that combines the bold flavors of Cajun seasoning with rice and vegetables. This recipe is easy to prepare and perfect for a quick and filling meal.
Ingredients:
- 2 cups cooked rice (preferably day-old)
 - 1/2 lb. shrimp, peeled and deveined
 - 1/2 lb. chicken breast, diced
 - 1/2 cup chopped onion
 - 1/2 cup chopped green bell pepper
 - 1/2 cup chopped celery
 - 2 cloves garlic, minced
 - 1 tablespoon Cajun seasoning
 - 1 teaspoon paprika
 - 1/4 teaspoon cayenne pepper (or more to taste)
 - 2 tablespoons vegetable oil
 - 2 tablespoons butter
 - Salt and pepper to taste
 - Chopped green onions and parsley for garnish
 
Instructions:
- In a large wok or skillet, heat the vegetable oil over medium-high heat. Add the shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove the shrimp from the pan and set aside.
 - Add the diced chicken to the same pan and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
 - Add the butter to the pan and melt over medium heat. Add the onion, bell pepper, and celery and sauté until softened, about 5 minutes.
 - Add the garlic, Cajun seasoning, paprika, and cayenne pepper to the pan and cook for another minute, stirring constantly.
 - Add the cooked rice to the pan and stir to combine with the vegetables and seasoning. Cook for 2-3 minutes to allow the flavors to meld.
 - Add the cooked chicken and shrimp back into the pan and stir to combine with the rice and vegetables. Cook for another 2-3 minutes to heat through.
 - Taste the fried rice and season with salt and pepper as needed.
 - Serve the spicy Cajun fried rice hot, garnished with chopped green onions and parsley.
